To make this vegetable kofta I make some twist .I prepared it from vegetables mix with soya granules . it is not only tasty but also loaded with lots of nutrition and healthy too.

  1. For making kofta
  2. 1/2 cup soya granules
  3. 1/4 cup grated cauliflower
  4. 1 medium capsicum very finely chopped
  5. 1 medium carrot very finely chopped
  6. 1 medium size potato boiled and mashed
  7. 2 green chillies chopped
  8. 2 tbsp dry mint leaves
  9. 1 medium onion finely chopped
  10. 2 tbsp Coriander leaves chopped
  11. 1 tsp ginger finely chopped
  12. 1/4 cup roasted gram flour
  13. 1 tsp red chilli powder
  14. 1 tsp cumin powder
  15. 1/2 tsp garam masala powder
  16. as taste Salt
  17. as required Oil for shallow fry the kofta
  18. For gravy
  19. 1 big onion paste
  20. 1 tsp ginger paste
  21. 1 tsp garlic paste
  22. 1 tsp Kashmiri red chilli powder
  23. 1/2 tsp red chilli powder
  24. 2 tbsp coriander powder
  25. 1/4 tsp turmeric powder
  26. as per taste Salt
  27. 1 bay leaf,
  28. 1 inch cinnamon stick,
  29. 3-4 pepper corns,
  30. 2 cloves
  31. 1 tsp cumin seeds
  32. 1 tsp kasuri methi
  33. 2 tbsp malai
  34. 1/4 tsp garam masala powder
  35. 2 tbsp oil

Instructions to make to make Vegetable kofta curry

  1. First take the soya granules in a strainer and wash it 2-3 times. then leave it for 10-15 minutes. Chopped all the veggies and keep aside
  2. Take a mixing bowl squeeze the soya granules to remove excess water. add this in the bowl.then add mashed potatoes and grated cauliflower. next add all chopped veggies. mix well
  3. Now add all powder spices mention above for kofta. Add salt mix well then keep aside for 10 minutes. Now add gram flour mix well.no need of adding water.make lemon size balls (kofta)from the mixture.
  4. Take a pan add 2-3 tbsp oil heat it and shallow fry the koftas in batches on medium flame. transfer these kofta in a plate
  5. For making gravy take a kadhai add two tbsp oil heat it add whole spices saute few seconds. Add onion,ginger and garlic paste together. saute until they turn slightly golden brown. now add Kashmiri red chilli powder saute half minutes then add coriander powder. mix and cook for 2 minutes. Add little water that spices had not burnt.
  6. Now add red chilli powder and salt mix well add 1/2 cup water. Cover and cook on medium flame for 4-5 minutes. after that add kasuri Methi and malai mix well. add some more water to adjust the consistency of gravy add garam masala powder and give one boil. turn off the flame.
  7. Now take serving bowl pour some gravy in it add fry kofta and garnish with coriander leaves. serve with roti or naan.(these kofta are very delicated. they break into gravy so do not add and cooked with while boiling the gravy)
